This was one of those weeks with low lows and high highs – such a rollercoaster. I got behind on my blog visits, as a result, but I look forward to catching up with your posts in the coming days.
The weather was beautiful Wednesday-Saturday (highs of near 70 (or 21 Celsius) and sunny. We went on many walks around the lake which was so nice. Now, it’s in the 40s today and rainy but it’s supposed to get back up into the 60s again in a few days.
Today is the Super Bowl in the US, which means lots of bad-for-you-but-tasty food and crazy commercials. Oh, yeah and there’s a football game too 😉. We will be having homemade gluten-free mozzarella sticks (which are just as good as any gluten-filled version of the same), potato skins (because you have to have a vegetable, right?) and chicken wings.
Speaking of food, we tried a wonderful soup, this week, at the recommendation of a friend. It was really tasty. I actually cleaned my bowl which I NEVER do. It’s called Green Enchiladas Chicken Soup, and the recipe is so simple, so I’m including it in case you want to try it:

Crock Pot Green Enchilada Chicken Soup
- 2 ½ pound / 1.1 kg of boneless skinless Chicken Breasts or thighs
- 28 oz / 790 g can of Green Enchilada sauce
- 24 oz / 680 g of Chicken broth
- 1 cup / 2 ⅓ dl half and half or heavy whipping cream
- 2 cup / 4 ¾ dl Monterey jack cheese
- 4 oz / 110 g cream cheese, cubed at room temp
- 4 oz / 110 g Green Salsa ( salsa verde)
- Salt and Pepper to taste
1. In Crock Pot add Chicken breasts or thighs, green enchilada sauce and chicken broth…cook on low for 6-8 hrs
2. About 30 min before serving Remove Chicken and Shred. the add shredded chicken, Jack Cheese, Cream Cheese, 1/2 and 1/2 and green salsa to crock pot. stir until cheeses are melted. * you can add additional salsa for taste.
3. You can top with sliced avocado, Cilantro, green onion and sour cream and add strips of Crisp tortillas if you like!
It’s simple if you can find cream cheese. Has anyone else noticed that cream cheese is very hard to find? I provided both US and UK amounts for you all and the recipe is naturally gluten free for those who, like me, have to keep the gluten out of their diet. We served it in little soup crocks, which we use often for soup.

I watched Marry Me with J. Lo and Owen Wilson because it was on Peacock’s streaming service as well as in theaters. The movie was surprisingly touching. Predictable, of course, but even hubby laughed at a few parts. I went in not fully convinced that I was going to like it, but I ended up enjoying it very much. ❤️

Ooh, that soup sounds delicious and all the superbowl foods you mentioned has got me hungry 😂 I hope you enjoy all the food! Also, The Lifestyle sounds like it’ll be a fun read and I don’t remember where I came across the trailer for Marry Me before but it looked fun albeit a bit cheesy and predictable. Sometimes you just need those movies though! I hope you have a great week ahead, Tessa 😊

Marry Me is kind of that way but not totally. I’m not a big fan of J. Lo in movies but Owen Wilson and his character added a little extra something to the mix.
And that soup is totally delicious- flavorful without being to hot and spicy. Scrumptious 😋

Have a great time watching the Super Bowl. I’m not a sport’s fan myself, but I’m still watching Greys Anatomy (I’m on series 15) I wish I were as healthy, but food is playing a big part in my life. I start the day with good intentions, but end them with lots of sugary snacks. I enjoyed the premier of my play, and loved all the other plays too. I’m back to writing my novel, or trying to.

And I have to stay as far away from sugary snacks as possible because I have no willpower when they are close at hand.

The End of Getting Lost is on my list! I love crockpot soups also! Just found a Japanese hot pot that you can put all your meat and veggie odds and ends into and it will work! With a soy sauce soup base! I hope to try that soup base, as I usually use chicken bouillon or broth. Happy reading week.

It hit 61 degrees here yesterday. Got a decent walk in on the beach. Today, it is snowing! Boo. 35 days until spring.

We’ll be watching the Superbowl here as well, and having wings. I’m glad to see you enjoyed the movie, Marry Me. I’ve been wondering about that one. I think I’ll check it out soon.

I think you’d like it. I really wasn’t expecting too but I wanted to watch some kind of movie and hubby had already mocked the movie on the Hallmark channel 😂 I ended up enjoying it very much ❤️

How could I forget about the commercials during the Super Bowl? I’ll be tuning in for the game, but completely forgot that the commercials are usually always every bit as entertaining. We just bought an air fryer so we’re going to test it out by doing chicken wings.
The soup recipe sounds great, and I can so relate to your cream cheese shortage. You’d think that stuff was gold as difficult as it’s been to find lately!

The soup is excellent. It really surprised me. And, I would really like to know what happened to the cream cheese. I wondering if it’s on those trucks protesting in Canada.

Hi Tessa! Ooh that soup does look delicious! I’ve seen the trailer for Marry Me and it does seem like a fun movie. I am watching The Eternals with my husband, but I think it’s starting to give me a headache!

You said cream cheese was hard to find and my first thought was how easy it is to find in the UK. But then I noticed the recipe said to cube it – our cream cheese is similar to butter in its consistency, so now I’m puzzled as to what exactly goes in the recipe! 😂
I hope this week is a better one and that the weather improves too.

I looked it up and Nigella says that in the UK the equivalent is called Soft White Cheese. Is that something your familiar with?

I think it’s the same or very similar to your cream cheese, ours is a little softer/runnier and is bought in a tub not a block.

That would be fine in the soup because it mostly melts anyway. It just adds a richness which is tasty.

Sounds like you’ve had an exciting, busy, tiring week of it! While I can’t say I have any interest in American Football, the food and buzz around sounds great. Over here we have been watching the Six Nations Rugby Tournament instead. Otherwise mine was a very ordinary working week, in which I have been re-reading Eldest by Christopher Paolini and working my way through the classic sci-fi show, Star Trek.
